Here’s a recipe for Goat Meat Pepper Soup, a classic Nigerian dish that is both spicy and flavorful. It's perfect for cold days or when you're craving something warm and comforting.


Goat Meat Pepper Soup Recipe

Ingredients:

  • 1.5 kg goat meat, with the bones, cut into bite-sized pieces
  • 2 tablespoons pepper soup spice mix 
  • 7 scotch bonnets (atarodo) – ground or chopped, you can adjust according to your spice tolerance. 
  • 1 medium onion (chopped)
  • 1 tablespoon ground crayfish
  • 3-4 scent leaves or basil leaves – chopped 
  • 2 seasoning cubes 
  • Salt to taste
  • 6 cups of water or just enough to cover the meat
  • 1 tablespoon of ground uziza seeds (optional, for extra spice)

  

Instructions: 

Prepare the Goat Meat

1. Wash the goat meat thoroughly and place it in a large pot.

2. Add the chopped onions, seasoning cubes, and salt. Pour in enough water to cover the meat.

3. Boil the meat on medium heat until it becomes tender, for about 35-45 minutes, depending on the toughness of the meat.

Add the Pepper Soup Spices

1. Once the goat meat is tender, add the pepper soup spice mix and ground crayfish. Stir well to combine the spices with the broth.

2. Add the ground scotch bonnets and ground uziza seeds (if using) to increase the spice level. Adjust the amount to suit your taste.

3. Allow the soup to simmer on low heat for another 10-15 minutes to allow the flavours to combine.

Add the Final Ingredients

1. Taste the soup and adjust the seasoning with salt and more spices if necessary.

2. Add the chopped scent leaves or basil for a fresh, herbal flavour. Stir well and allow it to simmer for another 2 minutes.

Serve

Serve your Goat Meat Pepper Soup hot, either on its own or with a side of rice, boiled yam, or plantains. It’s also great with a chilled drink to balance out the heat.
