If there’s one ingredient in Nigerian cuisine that is often underestimated, it’s locust beans. Traditionally, it’s used to flavour popular dishes like Ewedu, Vegetable soup or Egusi soup, and it comes in two main forms: whole (iru woro) and mashed (iru pete).
